Ultimate Cinnamon Rolls

There are some recipes that are worth the effort. Case in point: these Ultimate Cinnamon Rolls. They're warm, ooey-gooey, and perfect for Christmas morning. Busy person tip: prep them the day before for all the warm, cozy, cinnamon-y joy without spending Christmas morning in the kitchen. Best served warm with a hot cup of coffee!

Overnight Option
Once the rolls have been cut and placed in the greased baking pan, cover them tightly with plastic wrap or a lid and place in the refrigerator. Pull the rolls in the morning and allow to sit on a counter for 15-30 minutes. Meanwhile, preheat the oven, then bake as directed. This not only gives the rolls more time to soak up cream and rise, it makes it so much easier to enjoy fresh, gooey cinnamon rolls on Christmas morning!
Notes

Combine warm milk (should not be hot to the touch!) and yeast in the bowl of a stand mixer. Allow to rest for about 5 minutes until frothy.

Add eggs (room temperature), butter, and sugar. Mix to combine using a paddle attachment.

Mix in salt and 4 cups of of flour until ingredients are just combined. Wait five minutes, then remove the paddle attachment and swap for a dough hook attachment.

Beat the dough on medium speed until elastic and smooth, about 8 minutes, adding remaining flour if necessary.

Grease a large bowl and transfer the dough to the bowl. Cover with a dish towel and place in a warm (not hot!) oven that has been preheated for 2 minutes and turned off. Allow dough to rise for 30 minutes.

In a large bowl, mix butter, brown sugar, and cinnamon until well-combined.

Dust a large cutting board or countertop working area with flour. Place dough on the floured surface and sprinkle with flour.

Use a rolling pin to shape the dough into a large rectangle, about 16 by 24 inches.

Spread the filling across the dough.

Roll the long edge of the rectangle to make a tight dough log.

Slice the log into 12 equal sections and place in a greased 9 by 13 inch baking pan. Cover and allow to rise for 20-30 minutes.

Preheat oven to 375 degrees.

Slightly warm the heavy cream (should not be hot) and pour evenly over the risen rolls.

Bake rolls for 20-28 minutes, or until golden brown and centers are cooked. Remove from the oven and allow to cool for 10-15 minutes.

Use a hand mixer to blend the cream cheese, butter, and vanilla powder or extract. Beat in powdered sugar until smooth, then spread over the rolls.
