Super Easy Pecan Pie (no corn syrup required!)

My husband loves pie. Like really loves pie. I'm not what you'd call an A+ wife but I do try to make sure he always has pie in the house. It works well since I don't really care for pie. He gets the joy and the calories all to himself. And his blessed butt doesn't ever gain an ounce! I'd love to tell you that I lovingly make them all with elegance, patience, and care, but...I'm a working mom of two who does NOT love to bake. So I used the ready-to-go pie crusts out of a box. Pro tip-the store brand is just as good if not better than the name brand!


We've been married for quite a bit so I've learned to make a variety of pies. Having never even tried pecan pie, I assumed it would be difficult to make, but it's super simple. It's even easier when you leave out the sticky mess that is corn syrup. This pie is always my go-to for potlucks or gifts, it's so quick, always well-loved, and well, pecan pie rarely looks pretty so there's no pressure there. I hope you'll give it a try!

Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Preheat oven to 375 degrees.

Spread crust in a pie dish.

Mix together butter, milk, and eggs until blended.

Add sugars, flour, salt, and vanilla powder. Mix until well-combined.

Fold in pecans.

Pour into prepared pie dish.

Bake for about 45 minutes until crust is browned and pie is no longer jiggly.

Allow to cool and set for 15-30 minutes before serving. Feel free to add whipped cream or ice cream!

1 prepared pie crust

½ cup butter (1 stick) melted but not hot

1 cup brown sugar

½ cup sugar

1 tbsp all-purpose flour

pinch of salt

2 tbsp milk

2 eggs

1 tsp vanilla powder (or extract)

1 cup pecans
