Apple Cider Cranberry Sauce (Or Pie Filling!)

I'll admit it: I grew up on the canned stuff. As an adult, I assumed cranberry sauce from scratch would be difficult to make. But it's actually incredibly easy to make and to customize! It's just liquid, sugar, cranberries and optional spices. For the liquid, I used apple cider this time but you can use water, orange juice, mulled wine, raspberry juice...the possibilities are endless. Same goes for add-ins: you can use different spices, fruits, nuts, orange zest, anything goes! Use what sounds good to you or just what you have on hand. This recipe allows you to be flexible and creative without worrying that it won't turn out - it always does!

Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles
Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling
Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Add apple cider and sugar to a saucepan over medium-high heat. Whisk until combined and sugar is dissolved.

Add your (washed) cranberries. Bring to a low boil and cook until the berries burst.

Add in any mix-ins: spices, orange zest, nuts, etc.

If you're making a pie, transfer the mixture to your pie crust and bake at 375 degrees until the crust is browned. The pie will set as it cools.

If you're making cranberry sauce, allow the mixture to cool, then transfer to your serving bowl and refrigerate to chill. It will thicken as it cools.

1/4 tsp apple pie spice
